I love the classic Greek dates and honey combo. I think it tastes fabulous on top of yogurt in the morning, and I think it also goes great with some toasted pecans. I’ve taken my beloved yogurt mix-ins and turned them into my next popcorn mix recipe! The honey glaze on the popcorn is sweet in an unconventional way, because it’s not rich like caramel corn. Plus, the honey doesn’t completely coat the popcorn, so you save in calories and you still get the essential taste of popcorn. The dates and pecans create a perfect balance too. Surprise your friends on your next movie night with this unique mix!
Honey-Glazed Popcorn Mix
½ cup unpopped popcorn kernels
2 Tbs. honey
1 Tbs. unsalted butter
½ tsp. kosher salt
1/3 cup unsalted, raw pecans
¼ cup chopped dried dates
~Preheat oven to 350 degrees F. Prepare a baking pan with foil and nonstick spray.
~Use an air popper to pop the popcorn kernels. Pour the popped popcorn onto the prepared baking sheet.
~In a small microwave-safe bowl, microwave the honey and butter for 20-25 seconds and carefully stir until they are well incorporated.
~Drizzle the honey mixture over the popcorn, trying to distribute it evenly. Sprinkle the pecans evenly into the popcorn. Use a silicone spatula to carefully stir the popcorn and pecans until more of it is covered in the honey mixture. Sprinkle the salt on top. Bake for 10 min.
~Remove from oven and sprinkle the chopped dates into the pan and use your spatula to stir them into the popcorn. Let the mix cool. Serve in a giant bowl!
