Ever smell fresh espresso and think: “Wish I could eat up that smell…”? Problem solved! These not only taste good but they make you’re home smell like heaven. And the Seven Minute Espresso Frosting is the gooey goodness I’ve been searching for my whole life…sigh
These cupcakes turned out perfectly. The frosting…I had to tweak it from Martha’s. She tends to make things complicated when they don’t need to be. So throw everything into a pot on a double boiler and mix it with a hand mixer until it is nice and thick. Take it off the boiling water and blend in the vanilla and more fresh espresso (1-2 tbs). Mine turned out a little thinner than Martha’s and I couldn’t make fancy whisps with it, but it tastes delish and was way easy to use (just dip the top of the cupcake in it!). And when you’re done, there’s lots of extra frosting (I have no qualms with that) and it tasts good when shoveled in with a spoon! And after you eat four or five cupcakes just to make sure they came out all right…brew some espresso, make a cappuccino, and enjoy your drink with another cupcake!
