Well, its finals week in studentville which means… baking! Every year I spread Christmas cheer by baking goodies for all the people who were nice to me during the year (i.e. all those who came to my birthday!). This year it was a short and sweet list and they were highly rewarded.
I’ve never made marshmallows before, so I figured this would be the perfect time to start. I read a recipe for marshmallows and got cookin. Of course, I had to put my spin on the recipe, so since it’s Christmas, I made it more sugary and turned it into a s’more. I layered graham crackers into the bottom of a square cake pan, poured in my shmallows, and put a layer of Hershey bars on top. Then let it set, and cut into squares! Roll the sides in powdered sugar so they aren’t so sticky.
I also made the spiced cupcakes I made during Thanksgiving break because they aren’t super sweet and they taste savory.
Last but not least, I dipped pretzel rods in white chocolate and sprinkled on peppermint sprinkles. Sounds simple, and essentially it was, but I had to cover every surface in my kitchen just to have enough room for the pretzels to lay out and chocolate to set.
Wrap it all up in adorable Christmas tins, celophane bags, sparkly ribbon, and use an ornament (personalized by me of course) and you’ve got Christmas cheer. Now that’s a REAL gift!
