The directions go something like this in my own words: Roast bananas; they will turn mushy and slug-like in the oven. Pull out every bowl in your kitchen and mix the ingredients separately, sifting here and whipping there. Separate eggs, whip the whites, add the yolks to the batter one at a time and alternate the flour and sour cream into the bowl and then fold in the whites…no joke.
I am so exhausted from 45 min of just making the batter that I dont even want to look at the recipe for the frosting! Seriously, maybe I’ll make the frosting tomorrow. Maybe.

Well, anonymous, mangos are tricky to bake with because they can get mushy…if you’re willing to get into that kitchen and experiment with mangos and this recipe then heck yes, go for it! S, may I call you S? Good luck on your mango endeavors, S. Try to start by making a mango pie…with graham cracker crust!

One time I was at coffee shop with this really funny girl and she brought me a delicious banana bread cupcake. But now, I feel a little cheated because I know there could have been frosting too! 🙂
