Oh no, oh no! What are we supposed to do?!?! It’s supposed to get icey overnight, just like last year, and roads will be impossible and we may lose power! I don’t know why, but I love impossible weather. I think its fun…especially when people are freaking out over it. I love to go to Walmart to see the specials they’ve put near the door so people can quickly grab um and run home and burry themselves in their homes. This week it was: lamp oil, road salt, jugs of water, and Bud Light. Where do I even begin with this array of items? The fact that my electricity cuts off almost never effects my water, so I’ll pass on the jugs of water; ummm…anybody own an oil-burning lamp?; are you gonna salt the roads all over town single-handedly?; I guess all there is to do is drink so I have no qualms with the Bud specials. My disaster grocery list? What’s gonna save me from days with no power and nothing to do? Animal Crackers (the two-pound bag of course) and toilet paper. Yep, I’m going to be the only one lookin good on the other side of this storm.
Come home, quickly get ready just in case there’s no power soon: shower and blow dry hair, do laundry and dry it so I have stuff to wear in the dark, run the dishwasher, make a giant pot of popcorn (never use bagged corn!), and then…make muffins!
I know I haven’t made cupcakes in a while, but muffins are like a cupcake’s first cousin, so close enough! I made Magnolia’s oatmeal muffins but because the recipe was quite ordinary with no sparkle to it, I added craisins and grapefruit zest (screams morning time!). I made them with only half the fat, used wheat flour, and lightened the egg load so I wouldn’t feel so guilty sitting and binging on these in the dark while the gym is closed! I think I’m ready…ice me in!
(Ok so if my power goes out I’ll prob end up at my brother’s house enjoying his gas heating but at least I’ll have a “let me in please” gift to bring him! Who doesn’t love a muffin?)
