What do you do when a boy leaves cheap beer in your fridge? You make beer bread! (kind of a lemons, lemonade situation?) I used a super simple and quick recipe that I found online and tweaked it a bit, threw it in a bread pan and baked it for 40 min! So easy and gets rid of that beer I’m never going to drink. But it also made me wonder if using a fruit-based beer (like blueberry beer) would translate well into bread. So, looks like I’m going to be the one filling my fridge with beer I’ll never drink pretty soon.
This bread tastes so yum with a heaping bowl of my veggie stew! You have to try it:
~Prep: chop a crown of broccoli into florets; cube 1/2 cup zucchini and 1/2 cup eggplant (no need to peel!); mince 3 cloves of garlic
~in olive oil, saute the garlic in the bottom of the soup pot until translucent and fragrant
~add veggies, plus: 1/2 can white beans (rinse first), 1/2 can black beans (rinse first), 1/2 can garbanzo beans (rinse first), 1 can chopped tomatoes; sprinkle 1 tbs flour over the veggies and stir
~pour 3-4 cups of water until just over the top of the veggies
~add: 1/2 tsp cumin, 1/4 tsp red pepper flakes, 1/2 tsp paprika, 1 tbs onion powder, 1 tbs lemon juice, salt and pepper
~bring to a boil, then turn down to a simmer for appx 1 hour; all veggies should be fully cooked by now
~bring up to a boil again and add 3/4 cup long orzo and let simmer while stirring for 20-30 min. The orzo will absorb almost all of the liquid making it into a very thick veggie stew! Yummm! serve in a big bowl, sprinkled with feta cheese and a side of beer bread!
