Happy birthday David! I know you don’t read my blog, but may I just say, I made you a cake so please come home!
So my bro decided to take his booty on a birthday trip to Georgia. Well that’s all good, but I’m watching his dogs! I’ve got three big babies rolling all over my lap! Have you ever tried to bake in someone else’s house? Well, first you have to go through their pantry…and their desk drawers and medicine cabinets for good measure…and write down everything they DO have. Then you go to your own home, collect the rest of the ingredients (98% of the ingredients, in this case), pack them strategically and then return to the first home and proceed in baking. Now, you ask, why didn’t I just bake in my apartment and bring the cake over? The dogs. I’ve already hit the gym and lazed around my apartment for a couple hours and so I spent my time away from the house doing other things. Another problem with baking in another kitchen is not only the bowls (why aren’t any of them big enough??) but also this kitchen happens to have the oldest most retarded hand mixer I’ve ever attempted to use. Let’s just say there were shards of butter and flour everywhere!
My pup has a big dog complex and cries at the door wanting to play with the “big kids” and as soon as I open the door to let her out, she realizes her minuscule size and changes her mind. This happens about 20 times in the 2 hours I was attempting to bake.
I gave up on the aforementioned mixer and whipped everything by hand (sorry about the bent forks Dave!). I also used all of his peanut butter. Now, of course I bought peanut butter for this endeavor but I have a slight problem with having peanut butter around…it always seems to disappear? One pretzel dipped in p.b. leads to another and another…and then the p.b. seems to be missing. I went to peanut butter rehab a year ago and I cleared my house of all things peanut butter and I obstained for a good 6 months. I fell off the wagon first while at my parents’ house on vacation (because partaking in vices on vacation doesn’t count, right?) and then just again this week. I bought this really healthy peanut butter that has flax seeds in it and at first I thought it tasted gross. I thought: “Yes! This will definitely be around when I bake that cake because there’s no way I’m going to eat it!” Well, needless to say you can become accustomed to the taste of anything if you eat enough of it.
So, I’ve made this spice cake with peanut butter cream cheese frosting. It looks so yummy. The pictures are awful, I apologize, because they were taken on my phone. My computer is meeting its maker very soon and as it slowly dies, it gets harder and harder to transfer pictures from my camera to my computer. Please take a moment of silence for my computer………..now rejoice in the fact that the computer I’ve picked to replace it is really freakin awesome! Yay.
Now, I did say that I would only have one dessert a week during Lent, so I’m trying to hold off on tasting the cake until tomorrow when David gets back. Cross your fingers for me because this is going to be tough!
