Yes, I’m finally making more cupcakes. These turned out so so so good! It was a very involved process. To give you an idea of the time line, I turned on Julie & Julia because I figured it’d be like looking into a bit of a golden mirror, and I began to make the cupcakes. The finished product was put into the fridge as the ending credits started to roll! Once again, this recipe from Martha used every item of bakeware in my entire kitchen! I just love washing dishes…
(The wet ingredients were whipped for an excruciating six minutes over a double-boiler.)
Ok so I gave up eating dessert for Lent and told myself that I could have it once a week. I’ve been so good and I feel like if I eat dessert now, I’ll just gorge and never stop, so I only took one bite of a mini cupcake (I made standard and minis) just to taste test. The rest are going to my girls at clinical tomorrow. You have NO idea how hard it is to take a bite of a cupcake that is fluffier than clouds and tastes like French toast and be finished after one bite. I wanted to just shove ten down my throat all at once so it’d count as only one bite…but I didn’t! Gosh, why do I torture myself?! Those girls better eat all of these or I’m gonna have a problem on my hands tomorrow evening!
I didn’t even lick the batter out of the bowl or put my entire face into the left-over frosting bowl! I’m so good. The batter was super thick and so sugary…my hands were stuck to the bowl as I was trying to spoon it into the cupcake cups. That’s always a good sign.
Anyhoo, I guess I should see what I have to do last-minute before clinical since I just wasted all that time making the gift of baked happiness.
