Giving up sweets for Lent just means I get to be more creative with “dessert.” This has lately been apples, graham crackers with some peanut butter, a Splenda-sweetened cup of tea…ok so it doesn’t sound like real dessert, but I guess this is the price I pay for giving up what I love. I haven’t baked in forever for fear of licking the bowl and the beaters (and then maybe spooning a bit of batter out of the cake pan before it’s cooked). I needed to put everything in perspective and the bottom line is baking is more important to me than eating baked goods. I’ve been enjoying my vacation at my parents’ house and have been spending quality time with my friend Rachel. We have been doing some much needed girl time and relaxing. Now that she has driven off to Iowa, it’s time for me to get back to business: baking.
Mocha Meringues
Today I’m making meringues. I got the idea to try my hand at these because I was browsing around Whole Foods (reading every label and grabbing up random and interesting food-stuffs) and saw little containers of meringues and realized it was definitely time to make some of my own. I looked up a random recipe for them (it is so hard to be away from all of my cookbooks!!) and then decided to make my own recipe for them! I made them with:
4 egg whites
1/2 tsp cream of tartar
1/4 cup Splenda
1/2 cup sugar
1 tsp drinking chocolate powder (I found this super interesting “hot chocolate mix” at Whole Foods!)
1 tbs brewed and cooled coffee
~Beat the egg whites till stiff.
~Add the cream of tartar and beat in. Mix together Splenda, sugar, and chocolate powder and then one tablespoon at a time, beat into the egg whites. Lastly, add the coffee and beat in. Oven should be heated to 200 degrees F, spoon the meringues onto sheet pans and put in oven for 1.5 hrs until dry but still white. Then turn off oven and let sit in oven for 1 hour. Store in air-tight containers.
Mine look…rustic. I dipped the bottoms of some of them in some semi-sweet chocolate and I think these would also be good dipped in chocolate and toasted, chopped almonds. They’re light and airy and have VERY few calories, so eat up!
