Well, you’re welcome! No, I’m not bringing cake over, but I am helping you get a piece of cake super fast. I’ve finally caught onto the single-serving, microwave cake wave…
This is so weird, first off. It is so odd to be mixing batter and to keep reaching over to turn on the oven, then tell myself to cut it out because this cake is going into the microwave.
Judging by the picture, yes it is a dense cake and isn’t the prettiest, but hey, if Betty could perfect the trend, so can I.
Here’s the recipe I used, tweaked some:
1 egg (I used just the white)
2 tbs Greek yogurt (I used the honey kind for more flavor)
1 tbs oil (plus a splash more b/c no yolk)
1/8 tsp vanilla
1/8 tsp baking powder
1/4 tsp cinnamon
4 tbs sugar (2 Splenda, 2 sugar)
2 tbs cocoa powder
4 tbs a.p. flour (3 white, 1 wheat)
1 tsp milk
2 tbs craisins (this would be yum 1 craisins, 1 apricots)
~Spray a mug with non-stick spray. Mix all ingredients in a bowl. Pour into mug. Microwave 3-4 min. until toothpick comes out clean. Let cool in wave…then tip onto a plate or into a bowl and eat up (of course, add frosting or jam if you want to!)

Never throw a fit again because this was the quickest and most simple cake and there are many more recipes just like this out there…or just ask me and I’ll throw one at you!
