I was in the grocery store this evening to pick out cereal and ice cream. Truthfully, I read the label on every tub of ice cream and on every box of cereal. Picking the cereal was a taxing battle. I felt like if I chose the wrong one, there was never going to be an opportunity to choose again (silly, crazy, I know!). I wanted every single one. The ice cream? I read every label (this is typical of me; I’m a label reader) and I ended up leaving without any ice cream and actually wasn’t disappointed at all…because I had cereal on my mind.
Because I love carbs so much, you shouldn’t be surprised to find out that granola bars and snack bars are my favorite yum-yums ever. Every time I see a bar, I have to read the label and if it appears suitable, I have to buy it. I come home from a trip to Chicago with a bag of snack bars…typical. And like a security blanket, I try to always have one with me (purse, backpack, pocket, etc) because I never want to be caught in a boring moment without a snack.
So I have decided to make what I will be calling Jessi Bars tonight (can you guess who gave me the recipe?). I have clinical tomorrow morning and I have been eating snack bars like crazy during clinical, so I want to throw my own into the mix. Mine are a mix of dried cranberries, apricots, and pecans. It is supposed to make 16 servings but I’ve made them a tad thicker and so I didn’t get 16 bars out of my batch (But that’s ok! They’re low in calories anyhoo!). I have to admit that while I was stirring cereal into the melted ingredients, I was shoving cereal into my mouth too. I will do anything to lose those last few pounds except give up my carbs…I’m not crazy!

I have a granola bar named after me? I’m so honored! By the way, I am ToTALLY in accordance with the ingredients you chose for my namesake snack…I discovered dried apricots here in Spain. Yum! My next attempt at granola bars (today) will have a layer of dark chocolate coating the bottom to help them stick together (because I cut out so much sugar they fall apart on me) my add-ins: Pb, almonds, and dried banana chips
