Take Two!
Ok, so batch one seemed to go so well except for one thing…they were so loose! It was hard to actually pick one up and I ended up eating a lot of batch one with a spoon! So per thought exchanges with Jessi herself, I made a second batch and the result was perfection. Tah-dah…
Prepped the pan better this time, using parchment paper. Then, I spread on a thin layer of melted dark chocolate. While the chocolate was still melted, I pressed in the granola (same ingredients: cranberries, apricots, and pecans…though I used even less sugar this time around) and then I let it set. It was just the solution I was looking for. I was able to cut them into 16 bars, wrap them all up individually (pressing them in tightly as I wrapped), and put them away for future snacking! See, chocolate solves everything!

Well, this is about all the “baking” I’ve been able to do lately. I’m so sad because I’m bursting at the seams with ideas for cakes and cupcakes that I really want to bake, but unfortunately I’m also bursting at the seams with homework and projects and torturous school work. Hopefully after the next few weeks are over, I can get back to my baking!

Jessi, that sounds like heaven and-a-half! I’m thinking dried cherries, toasted almonds, and peanut butter would be yum too!
