I have been a TOTAL space case lately. I get mush brain when I sit and study for a week straight! I’ve been studying and feel so worn down so I got the bright idea to bake something super simple and give myself a break. I chose to do an easy oatmeal muffin, kind of like my Morning Muffins I made a couple months ago. This time, I used orange zest, Craisins, and a touch of dark chocolate. I quickly threw all the ingredients into a bowl, whipped um together, and divided the batter into twelve muffins, put it in the oven and started to daydream…oh sigh, these muffins are gonna be so good…I can hardly wait to bite into one and hit a dark-chocolate-chip…
Study-break Muffins
Well, then I snap awake within a few seconds and realize I forgot the friggin eggs in the recipe! Quick, pull them out of the oven! So I threw the batter back into my bowl and threw in the eggs and stirred…yup, there goes the chocolate chips. So these now are all brown and the dark chocolate flavor is evenly dispersed throughout the muffin instead of in chunks. Maybe not all mistakes are that bad because, hey, chocolate is chocolate! Now, if only my brain would re-solidify and turn back on!
Ok, I don’t normally do this, but I’m going to put my recipe in this entry…my mushy brain is making me not only more emotional, but also in the mood to share. I want you to eat muffins with me!
Melissa’s Study Break Muffins
2 cups oats
1.5 cups milk
1.5 cups flour (1/2 cup white, 1 cup wheat)
1 tbs baking powder
1 tbs flax seed meal
1/4 tsp cinnamon
2 large eggs (1 whole, 1 egg white)
1/2 cup packed dark brown sugar
1/2 cup margarine (or butter if you float that boat)
1 tsp vanilla extract
1 tbs orange zest
1/2 cup Craisins
4 oz (melted) dark chocolate chips
~preheat oven to 400(deg)F. Mix milk and oats. Wave the marg/butter so melted. Mix melted margarine into the milk and oats. Add all the dry ingredients and mix-ins and mix it up! Pour into 12 muffin cups and bake 16-18min. Eat!
