I haven’t posted in a while because the only thing I’ve baked since I got home was another loaf of bread. This is because I have spent all of my baking funds on going to a Goo Goo Dolls concert! Hoot. My budget is quite tight and if I want to do any recreational activities, unfortunately my baking budget gets sacrificed. Anyhoodle, I finally woke up and made some cookies! I was contemplating making some classic chocolate chunk cookies (because I’m out of chips, of course) but then I was craving something a little more out of the ordinary…
The result? Mexican wedding cookies! Who doesn’t love a good dose of powdered sugar?
Plus, through my new roommate I’ve been meeting all sorts of new people, which means I feel a need to come bearing gifts of baked goods (because who would turn away a girl with cookies?). I whipped up these cookies, did my hair and make up, packed up the drinks, and headed out for a fun evening of mingling over a baseball game that I had trouble following! Overall a successful evening!
By the way! Ever used a slap-chop? It’s one of those wonderous infomercial cooking tools that you just have to own. You throw the pecans (or whatever) on the counter, and press the top of the thing and…chop chop chop! My roomie has one and it made chopping the pecans that went into these cookies super quick and swift.
