A bit of birthday-week baking has begun. Today I decided to make apple cupcakes with butterscotch cream cheese frosting. Why yes, that does sound good, doesn’t it?
I drove from Fayetteville to my parents’ house yesterday, all the while brainstorming which baking endeavors I would tackle during my week here. I knew that my birthday might be busy and I may be spending the weekend partying with my friend, so I’d have to plan the projects around that. So, upon pulling into the driveway, I had a short list of treats I wanted to make. I also had a short list of treats in my head that would possibly translate well into good eats for my fantasy bakery…you can never be too prepared when you’re dreaming big!
I went shopping this morning for my short list of baking items. I grabbed a bunch of big, green apples, thinking I’d need at least three or four…but then when I re-read the recipe I was going to use to base my version off of, and then deciding to cut the recipe in half, I realized I really only needed one apple. Oops! Guess I’ll make pie or crisp with the rest? I peeled and diced the apple and set it aside while I whipped up the frosting. A bit of cream cheese, butter, brown sugar, molasses and vanilla, my frosting turns out perfect, glossy and slightly sweet. Perfection. Then I whipped up the cake batter which was light and fluffy and then folded in my apples. After baking low and slow, these light fluffy cakes made the kitchen area smell like heaven.
The cake has more of a mix of a sponge cake and coffee cake texture and taste. It is perfectly complimented by the frosting! I must say, a pure winner. Not a dense, stomach-filling cake, but a light and tasty treat. Sigh, I’m good! Even my younger brother who doesn’t like cupcakes (seriously?!) liked these!
Now, what kind of cake shall I request for my birthday cake tomorrow? Do you think I’ll have to make my own, or will my mommy make one for me?
