It actually hasn’t been very long since I baked last; it’s just been several failed baking experiments in between posts. I attempted some meringues but they never baked dry. I also made some mini pies which had a wonderful filling, but I slightly burned the crust (or as my dad would put it: I cooked them perfectly). The filling for my pie was a mixture of apple, strawberries, and blackberries seasoned with cinnamon, brown sugar, and honey. My crust was a mix of white and wheat flours and was perfect…except for the burnt parts. Steve assured me the pie tasted wonderful, but my ego does not allow me to post pictures of the finished product.

So, I decided to get back to basics and make cupcakes…and then rethought the matter and decided to make pound cake instead! The best laid plans…

I made a brown sugar pound cake, glazed with a browned butter glaze that I had previously made when glazing pumpkin cupcakes. I figured the glaze would be perfect because the pound cake was made with dark-brown sugar and then I added cinnamon to the glaze which all just sounds warm and yummy…and like I would want to eat it with a scoop of coffee ice cream or something. So, of course, while I was making my cake, I was eating my coffee ice cream out of the freezer.
I keep getting side tracked when contemplating what to bake. I saw this beautiful, glossy chocolate icing in a Martha Stewart cookbook and really wanted it, but the amount of butter exceeded what was in my fridge. Then, while watching a marathon of Top Chef (yes, I can multi-task and watch marathons of things while organizing my next semester of classes) there was a commercial for the dessert edition season of Top Chef with a giant slice of tiramisu…well I really want that but I don’t have any of the ingredients. So, that kind of brought me to a warm pound cake, sans chocolate…though that train of thought may make no sense whatsoever.

Anyhoo, my point is (I think) that it was just time to make some cake! This cake was not only super simple (shoot me a message if you want the recipe) but it also was super yummy! It was moist and had crumble and was so comforting (maybe because I was eating a slice of it at 11pm).
