Yesterday was my birthday! And due to it being my birthday, I’m going to do a post that is out of the ordinary and use personal pictures that have actual people in them! But don’t get too used to this!
For my birthday, I wanted my mom to make my cake, just like when I was younger. Instead of my usual chocolate cake with chocolate-fudge frosting, however, I was in the mood for my grandma’s coconut cake…with a twist! Everything is better with chocolate, and that includes coconut, so I wanted a layer of fudge frosting through the middle of the two layers.
I watched and chatted with my mom as she mixed and measured and we deciphered the high-altitude recipe into low-altitude (grandma’s recipe is usually baked in Denver). The only task I performed was beating the egg whites until stiff. As the cake cooled, we ran to the store for powdered sugar for the frosting.
She whipped up a small batch of her chocolate-fudge frosting for the middle, then got to working on the seven minute coconut frosting for the tops and sides.
We stumbled upon a bit of a problem when it became apparent that the hand mixer had a short cord…too short to reach the stove to beat the ingredients over the double-boiler. Oops! So, after fetching an extension cord, the icing was whipped up. So fluffy and perfect! I got to frost the cake and cover it in coconut flakes…and lick all the beaters!
After finishing the cake, we went out to eat Indian food (What? That’s not what you eat on your birthday?). After stuffing myself to the brink of full (which is wonderful after eating so scantily due to a stressful last month), I got to open my present! Drum roll please… an ice cream maker! Can you see the possibilities? We’ll start simple with my favorite mint chocolate chip, then head to chocolate Butterfinger, then probably get hit by the Ben and Jerry’s bug and start throwing everything from the kitchen into it! Sounds like an awesome rest-of-the-summer awaits me.
Then my mom and I threw on our walking gear and took a quick jaunt around the neighborhood. I needed to walk off a little dinner before cutting the cake just so I could take a bite of it! The candles were lit, a wish was made…let them eat cake!
