For the last opportunity to bake at my parents’ house, I decided to make another grandma-inspired dessert, accompanied by an ice cream tribute to my favorite candy bar.
I absolutely love cobbler and have really been wanting that slightly sweet, fruity, and comforting dessert for quite some time now. I chose to use the peaches packed in water, Splenda, and a milk-based biscuit topping (instead of cream) to cut the calories. It turned out so good and perfectly sweet without all that sugar. I followed a different recipe for the biscuit topping and in the picture they were supposed to be thick and cut like biscuit dough…mine was gloppy and I wouldn’t have been able to manipulate it. I just spooned it on top of the peaches and baked it up and it turned out perfect!
For the ice cream, I started with a custard base. I decided to use non-fat half and half instead of cream, but it still churned up perfectly! I added coconut extract to the base, put it in the ice cream maker, then as it froze I gradually added toasted, chopped almonds; shredded coconut; and mini chocolate chips. Just like an Almond Joy! And it tastes just like it too! This is probably one of the best ice creams I have ever had. Snap, I’m good!
