Time for the first taste of fall!
Well I’m completely exhausted. In addition to moving (one small Civic car-load at a time), Razorback games (go hogs! We beat Georgia!), and exams (all As, all the way), I decided I need to get back into baking as soon as possible so it doesn’t slip away from me. I wanted to start with something out of the ordinary.
I found a recipe for sweet potato muffins on Williams-Sonoma’s website and, of course, decided to change it as much as possible. I also found some adorable cupcake liners at Target, dedicated to Halloween. So, fall baking has begun…except it’s over 80 degrees outside here so it doesn’t feel like fall at all!
I mixed together sweet potatoes, apple sauce, Greek yogurt, egg whites, cinnamon and sugar, pecans, oats and flour, and baking powder…not even close to the original recipe! It made 12 beautiful, orange muffins, crusted with a bit of cinnamon-sugar. They turned out very tasty. I was taken by surprise because I frankly hate sweet potatoes…don’t ask why I thought these muffins would be a good idea…but they turned out so good. My only disappointment was the muffin liners seemed to hold on tight to the muffin…ripping out a ton of the muffin when trying to remove them. So frustrating.
But, fall baking in a new tight-quarters kitchen has begun!
