Well, it’s the first football game weekend and that means tailgating and…cupcakes!
I was in charge of some major snacking for this tailgating extravaganza, so I dug through my cabinets and chose a simple recipe from what I had available. I adapted the vanilla cupcake recipe from the Magnolia Bakery by adding cinnamon. I then topped the cupcakes with a frosting from my own crazy mind: peanut butter cream cheese frosting! So yummy and so perfect for football!
I spent Friday first making salsa. I roasted up poblano peppers, jalapenos, corn, and garlic then diced up some tomatos and onions…stir, mix, dash of s&p and a squeeze of lime. Que perfecto. Then I made the cupcakes and wrapped them up so I could frost them Saturday morning before heading off to our spot.
As the tailgating went on and more and more beverages were consumed, I was told by our group that my cupcakes (and salsa) were amazing. Well yeah, of course. We ended up packing everything off and heading to the game (just a formality because the whole fun of the day was the actual tailgating)…pigs won!
Lets just say, boyfriend felt extremely sick that whole night and the whole next day. I guess that’s what happens when you consume your weight in cheap beer and eat approximately 5 hot dogs and 10 cupcakes (I promise, the cupcakes were stellar good and just the amount was what contributed to the awful feelings later). We recovered by spending the next day (yesterday) at the lake with family and getting sunburned and dehydrated. What a perfect way to kick off football season!
