Well I finally decided on a fuel-packed muffin to make to aid in my post-run hunger. I’ve been trucking along with my running and my diet has been changing along with it. I’ve been craving more good carbs and protein and been steering clear of sweets even more than usual.
I made a muffin that was based very loosely on a recipe from Williams-Sonoma. Their muffin was a banana nut muffin, and mine…pumpkin oat. Not exactly the same, but the same building blocks helped deliver the result. I packed my muffins with pumpkin, pecans, oats, and flax seed, which resulted in a dense, moist power-food. Plus, with a small smear of peanut butter, this muffin tastes heavenly.
Only 69 days until the half-marathon!

Actually, this looks like a really good idea, so healthy with so much fiber. Reminds me of the bran muffins (dark and dense) that I used to get at the Wild Oats in Denver.
