I had quite the dilemma today. I was craving birthday cake…and oatmeal. Quite the combo, huh? Call me geriatric, but I love oatmeal. I love brown sugar and cinnamon and I love how warm and comforting it is. And I love mixing in random stuff from my pantry and fridge to see how creative I can be…I’m a real oatmeal chef! But that craving was interfering with my desire for birthday cake. I really wanted it.
So, I pulled out Baked Explorations and drooled all over the pages, especially the ones with tall, layered cakes that were covered in creamy icing. Then, I pulled myself together and chose a practical solution: the oatmeal chocolate chip cake. I am often swayed when someone tells me that my breakfast can be a dessert, and vice-versa. I didn’t even have the ingredients for the cream cheese frosting, but I made the cake anyways. It filled my home with the comforting smells of oats and chocolate, and because I substituted chocolate chunks for the chocolate chips, there was more chocolate in mine! Yum. Just what I needed, sprinkled with powdered sugar.
