I haven’t baked in a while and there is good reason for that. I definitely will get back to muffins and such soon (I’ve really been wanting a muffin) but lately I have been focused completely on a new project in my life. I am training for a half-marathon.
That’s right! A half-marathon! Today was day 5 of training and I am propped up on the couch, exhausted and jelly-legged. I have a gradual yet rigorous training schedule that I have been following along with a new view on the nutrition necessary for the race.
The Bentonville Half-Marathon is on April 2 and I have my countdown going on my kitchen dry-erase board. I also have new custom insoles for my shoes and a fear of what next week brings (my gym membership through the University is officially up on Monday and after that…I’m out in the cold because I’m still unemployed I cannot afford a gym). Cheer me on please because I need all the encouragement I can get! As of today: 76 days until Race Day (and I’m tracking my weight loss but I won’t share that here)!
On the kitchen front, because this is a blog dedicated to my kitchen, I bought a cast iron skillet! Isn’t that exciting?! I’ve always wanted one and they’ve been a staple in the majority of (Southern) kitchens for hundreds of years (I’m making up stats that sound like they could be right). I don’t fry things, but they are also used for making corn bread, some cakes, and roasting veggies…endless possibilities and I can hardly wait to start playing around with it. Plus, it weighs a gozillion pounds so it only adds to my workout!
