This last weekend was quite the whirl-wind. It was my younger brother’s graduation, so a treck to Chicago was necessary. Before the trip, however, I needed to bake some dessert! I was informed that there would be loads of cookies and pies already at my parents’ house for the big hurrah, so I needed to make cupcakes…carrot cake cupcakes of course!
Carrot Cake Cupcakes
For the recipe, I used the same recipe I had used for my older brother’s birthday cake this year (click the link to see the recipe!). Instead of half of the oil, I used applesauce, and instead of 1/3 of the all purpose flour, I used whole wheat. I also made another half of the recipe because I needed to make 3 dozen cupcakes! I made the frosting and decorated them after we arrived at my parents’ house (some with walnuts, some without for those who were allergic to nuts).
It was a wonderful weekend full of family and lots of fun and tons of desserts (chocolate chunk cookies, craisin oat cookies, raisin oat cookies, molasses cookies, cherry pie, coconut cream pie, brownies…did I leave anything out?)!
