I’ve gotten a bit out of control when it comes to my version of Larabars (Buddy Bars!). I love that they are all natural, raw, and nothing but fruit and nuts. My latest version is a classic PB&J. Now, who doesn’t love a good PB&J?
My food memory of peanut butter and jelly as a child is grape jelly, but today, I’m jumping in with strawberry. I found some awesome dried strawberries that were still moist and sweet, yet not artificially sweetened. Where did I find these? Ozark Natural Foods. If you live in Northwest Arkansas, and you love to do some adventuresome baking, scour the bulk section of Ozark Natural Foods and you’ll find some true treasures! Plus, you’re supporting the community!
Once again, I used my bullet blender to blend these up, which is oh-so-simple. Use the same technique as the Pistachio version of my Buddy Bars and you’ll get fabulous results! And, if it is important to you, you’ll be happy to know that these are considered raw, vegan, and gluten free!
Homemade Larabars: Peanut Butter and Jelly
I like to leave a bit of chunky peanut texture to it!
PB&J Buddies (homemade Larabars)
40g dates
40g dried strawberries
25g (~1/4 c) roasted unsalted peanuts
25g roasted salted cashews
few drops vanilla extract
Note: you’ll get two 50g bars and an extra Jr. Buddy! Each PB&J 50g bar has 200 calories, making it a perfect afternoon snack!
Another note: I used unsalted peanuts yet salted cashews for a reason. These bars need a dash of salt, but too much will overpower the subtle taste of strawberry, so I chose one of the nuts to be salted. You can have the cashews unsalted and the peanuts salted if you’d like, or both unsalted and add a dash of raw salt before you blend! Whatever combo works for you is great.
