As you know, I can get really excited about tailgating on game days. My favorite part is the baking. I love sharing my goodies with others and watch how excited they get about being given something homemade and delicious.
For this game, I wanted to theme my cookies for the occasion! Because there is absolutely nothing that a bunch of rowdy, drunk, tailgating men appreciate more than a themed cookie. Right? That’s what I thought.
This is honestly a very basic cookie recipe and you’ll love it too!
Iced Oatmeal Cookies
Oatmeal Cookies
(based on recipe by Quaker)
3/4 c butter
3/4 c brown sugar
1/2 c white sugar
2 eggs
2 tsp. vanilla
1 and 1/2 c a.p. flour
1 tsp baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
2 c. quick oats
2 c. old fashioned rolled oats
Icing:
1 c. powdered sugar
1 Tbs. corn syrup
2 Tbs. water
10 drops (give or take) food coloring
few drops of vanilla or almond extract, depending on your preferences
~Preheat oven to 350 degrees F and prepare baking sheets with silicone mats or parchment paper.
~Cream together butter and sugars. Add the vanilla, then add the eggs until they are well incorporated. Add your dry ingredients gradually until they are all well mixed in.
~Use a 2.5oz scoop (or whatever you like to delve out your cookies with) to portion out cookie dough onto sheets (it helps to flatten out the ball with the palm of your hand before baking them). Bake for approximately 11 min. Let cool on wire racks and prepare your icing!
~Mix together icing ingredients in a small bowl. Make sure the color is perfect for your spirited needs. Dip the top face of your cooled cookie in the icing, and place back on the wire rack to let the icing set (cleanliness tip: put some wax paper or something like that under the rack because the icing may drip down). Wrap up your cookies and give them to all your friends at the tailgate… i.e. enjoy!
