People would be surprised that if you make a Rice Krispie Treat with margarine or using an alternative butter, they really aren’t that high in calories. Yes, they have a high sugar content and no nutritional value, but they aren’t the worst snack or dessert out there. It’s hard to tweak the classic recipe, but I wanted to put an autumnal twist on it and health it up a smidgeon.
~microwave pumpkin, marshmallows, and spices in the microwave for about 1.5 min until melted. Have your cereal measured out and ready in a bowl, and pour the pumpkin-mallow on top and mix it in. Press into a non-stick-sprayed 9×9″ pan. Tah-dah!! You know the drill: let it set, then cut it up and dig in!
Humoring my significant other: Steve was eating the treats and curiously asked me what would happen if you baked the rice krispie treats. I told him it would over-toast the rice cereal and burn the sugar. I could tell by the skeptical look on his face that he didn’t quite believe it, so I flipped the oven on 300 degrees, popped in a pan of pumpkin spice krispie treats, and set the timer for 10 min…well, they didn’t look burned, but they certainly tasted overcooked! But I guess anything tastes overcooked, when it isn’t supposed to be cooked in the first place! 🙂

I go for naked classic and I could eat the whole recipe. O.K., maybe half a recipe in one sitting. Maybe that’s why I’m not allowed to make them.

I hear ya. I usually can hardly wait for them to set. I have been known to eat the krispie/mallow mixture out of the pot before it gets to the pan!
