And the leftovers recipes have begun! Everybody knows that this is the best part of Thanksgiving…the food that can be morphed into so many delights after the big day. This year, I made homemade cranberry sauce, and this was the first leftovers transformation that was made: cranberry crisp. If you have cans of cranberry sauce, you can use that too, but this is just amazing with the homemade version (because, honestly, the homemade version is like a big ol’ bowl of pie filling!).
Just in case you’re still in the mood to cook within the next few days, I’ll give you my recipe for homemade cranberry sauce:
- 2 bags of Ocean Spray fresh cranberries
- 1.5 cups water
- 1 medium apple, peeled, cored, and diced
- zest and juice of one orange
- zest and juice of one lemon
- 1/3 cup granulated Stevia + ¼ cup sugar
- 2 tsp. cinnamon
- 3 whole cloves
- In a medium sized pot, put cranberries and water on high heat. When they start to pop open, add the Stevia, sugar, apple, citrus juices, and spices. Let boil until it begins to foam, then reduce to a simmer for 15-20 min until all of the cranberries are open and the fruits have melded together.
- Turn off the heat and let your cranberry sauce come to room temperature, then place in the fridge until you’re ready to use it! Be sure to fish out your cloves before serving it (it's easiest to tie them up in a sachet so you can get them out!).
- 1 Tbs. brown sugar
- ¼ tsp. cinnamon
- ½ Tbs. butter (or margarine), room temperature
- ¼ - 1/3 cup old fashioned rolled oats
- Use a fork to mash the butter and brown sugar together. Then, add the cinnamon and oats and work it together (either with fingers or fork), keeping it a large, piece-y texture.
- Place about ½-2/3 cup of cranberry sauce in your ramekin and top with the raw crumble topping. Bake at 350 degrees F for about 20-25 min or until golden brown and bubbly. Enjoy on it’s own or with a bit of vanilla frozen yogurt! Yum!
