Ready for something melty, rich, chocolatey, and mildly healthy?? You should be! Here’s a quick and easy recipe for a chocolate chunk muffin that is completely dairy free…yes, even the chocolate! Believe it or not, you won’t miss a thing with this one. When it came out of the oven, I ate a bite of it, and immediately started to make another to give to my neighbor! Then, I jumped in the car and drove one to Steve at work for him to try too. I could hardly believe how good dairy-free chocolate could be. And, honestly, I think it’s because Enjoy Life knows their stuff. They are amazing! But, I digress! This recipe is super similar to my spiced pear muffin too, so you already know how simple it is.
Vegan Chocolate Chunk Muffin, for one
yup, still using Halloween baking cups
Vegan Chocolate Chunk Muffin, for one
2 Tbs. whole wheat flour + 1 Tbs. white flour
1/4 tsp baking powder
pinch of salt
1 Tbs vanilla soy yogurt (I use WholeSoy)
1/2 tsp coconut oil (I use Artisana; you can use an alternate fat but this one is perfect for this recipe)
1 and 1/2 Tbs unsweetened almond milk (or “milk” of your choice)
5 drops of liquid vanilla stevia (or 1 tsp. Splenda/sweetener)
1 Tbs. Enjoy Life Mega Chunk chocolate chunks (or you can use their chips!)*
~preheat oven to 375 degrees F and prepare your baking cup (put a paper baking cup in a ramekin or muffin tin)
~Mix all ingredients together until well incorporated. Transfer batter to baking cup. Rasp it on the counter (lightly) a few times to get the batter well into the cups. Bake 18-20 min! Yum

*You can use any baking chip or chunk in this recipe, especially if you aren’t vegan or don’t have a dairy allergy, BUT why would you when the chocolate chunks from Enjoy Life are so good?! They are allergen free so you can be confident when using them to bake a recipe for that friend who can’t have anything that is in your ordinary pantry. Plus, they melt into pools of yummy chocolate in your muffin (or brownie, or cake, or whatever!). I was shocked because I loved them so much.
