Here’s another great “for one” muffin recipe! This is my trail mix muffin, which I made using Enjoy Life’s “not nuts! Mix” which is vegan and nut free (and free of wheat, dairy, eggs, soy, fish, shellfish, casein, sesame…the allergen-free list goes on and on!). I was so excited to receive this product in the mail, because it has pretty new packaging, which I love! Plus, I think it’s amazing that in 1/4 cup of the mix, there’s only 130 calories, which makes it a perfect snack on its own. I have two flavors: Mountain Mambo and Beach Bash. The Mountain Mambo (sunflower kernels, pumpkin seeds, raisins, apples, non-dairy chocolate chips, and cranberries) is what I used in today’s recipe, and I have a recipe for the Beach Bash (sunflower kernels, pineapple, pumpkin seeds, cranberries, and apricots) which I’ll post later.
~Preheat oven to 375 degrees F and prepare a baking ramekin with non-stick spray
~Mix all ingredients together in a small bowl. Transfer to ramekin. Bake appx 20 min or until test stick comes out clean. Enjoy!

A few questions ~ what size ramekin do you use to bake this & do you think it could be made in a muffin pan, and do you have a recipe to make more at one time?

I realize that, I just thought you shortened it from a larger recipe, so I thought I’d ask.
But I just made this exactly as directed & it made TWO. What size muffins are you making? Or what size is the ramekin?

I used a “standard” muffin or 1/3 cup ramekin. I filled them pretty full when making these which is why they appear so tall. I suppose you could divide the batter between two and end up with shorter muffins. But I was only making one. 🙂

I used a standard muffin tin as well & filled them as full as they would go & got two really big fluffy muffins; there was a tiny bit of batter left but not enough for a third. I will let you know how it works out when I increase the recipe to end up making a batch for a dozen~
