This banana bread is gonna help you start your day off on the right foot. It’s packed full of wheat, flax, and oats, and a mixture of healthy walnuts, applesauce, and bananas. Now, doesn’t that sound like a relief after a holiday season of indulgence? Plus, it tastes so good, you may even be tempted to warm up a slice and top it with a scoop of vanilla ice cream for dessert instead of that calorie-packed brownie!
~Preheat oven to 325 degrees F. Prepare a 9×4″ baking loaf pan with non-stick spray.
~In your mixer, start whipping the egg whites. When they get foamy and opaque, but not yet stiff, add Splenda. Add applesauce and oil and mix until incorporated. Add your bananas (I throw mine in, a half of a banana at a time, and let the mixer break them down), then the vanilla. Then add your dry ingredients and mix until the ingredients are incorporated. Fold in your walnuts. Pour the batter into the pan. Bake for 50 min to 1 hour or until a test stick comes out clean. Let cool on a wire rack for about an hour, then wrap the entire loaf in plastic wrap (you want to wrap the loaf while it is still semi-warm so the moisture will soften the bread and it won’t have a crust). Serve with butter spread, nut butter, ice cream, naked, or however you please!
