Here’s my second recipe using Enjoy Life’s “not nuts! Mix.” This one is perfect if you love the taste of the tropics (I know I do!). I chose to use coconut oil because it adds just another depth of flavor to this vegan delight. This recipe is similar to my Trail Mix Muffin!
Vegan Tropical Mix Muffin, for one
2 Tbs. wheat flour, 1 Tbs. white flour (or 3 Tbs of flour of your choice)
1/4 tsp. baking powder
sprinkle salt (scant 1/8 tsp)
1 tsp. sweetener (I used ~1/4 packet of Splenda)
2 Tbs. non-dairy milk (unsweetened almond, or milk of your choice)
1 Tbs. non-dairy yogurt (WholeSoy vanilla yogurt, or yogurt of your choice)
1/2 tsp. coconut oil (or vegetable oil if you prefer it)
couple drops of vanilla extract
