Thank you Pinterst! I’ve been inspired, yet again. I suspect that if you’ve ever been on Pinterest, you too would have been hooked and stuck in the food and treats sections. This section gives me so many great ideas, but great ideas are also challenges to make things just a bit healthier. Healthier, may I say, doesn’t always mean healthy, but it is better than the original recipe.
I was caught by these no-bake peanut butter white chocolate clusters which would be so easy to make for holiday parties. It would be easy to throw together and a big hit for munchers, and you’d be so proud (because you didn’t slave away, yet it turned out awesome!), but why not do yourself and your guests (or fellow party-goers) a favor and try to give them the most guilt-free version? Depending on how many people are at the party or how many people you’re gifting to, you may want to double or triple the recipe. Here it is:
- 1 and 1/2 cups Peanut Butter Cap'n Crunch cereal (or Puffins if that's your style)
- 1/2 cup dry roasted, unsalted peanuts
- 1/2 cup mini marshmallows
- 1/2 package of almond bark (appx 1/2 pound...you can sub white chocolate chips if you prefer)
- flake sea salt, optional for garnish
- In a medium bowl, microwave the almond bark until melted. Add the cereal, peanuts, and mini marshmallows and stir to coat (the mallows will start to melt a bit). Use a tablespoon to drop globs of the candy mixture onto a piece of wax paper. Sprinkle tops with a bit of sea salt. Let set. Enjoy!
This recipe has all the peanut-y, crunchy, and salty sweet goodness of the original recipe without all the calories! Try not to eat them all before the party though 🙂
