These cookies are really amazing. They have the texture of cake, the taste of blueberries and graham crackers, and the delightful hint of sweetness from white chocolate. They are a hearty cookie that will be sure to satisfy you. I tested them on my apartment building staff by leaving a plate of cookies in the lounge area, and if the clean plate club means anything…well, you get the idea 🙂 Nobody had any clue that they had half the fat and a fraction of the sugar of an ordinary cookie!
~Preheat oven to 350 degrees F. Prepare 2 baking sheets with silicone mats or parchment.
~In your mixer, cream the butter and sugars until light colored and fluffy. Add the applesauce and egg whites and continue to mix until well incorporated. Add vanilla. Add all of the dry ingredients, and slowly mix until incorporated, and then add the graham crumbs. Finally, mix in the white chocolate chips and dried blueberries.
~Drop the cookie dough onto your baking sheets, spacing well, 12 cookies per sheet. Wrap a piece of parchment around a spatula and gently press to flatten each cookie dough ball (because these cookies don’t spread much, I like to flatten them a bit until just over 1/2″ tall). Bake 12-15 min or until golden brown. Let cool and enjoy!
