To say that these cookies went over well with my family would be a HUGE understatement! I felt incredibly guilty when it was brought to my attention (by my boyfriend) that I hadn’t made cookies in awhile, and that my cookies are always really good, and…well, I got the hint. Plus, I knew my parents were coming to visit and I needed a plate of something yummy at hand, so the need to make cookies became even more pressing. I decided I needed a cookie that was rich and chocolaty, but also chewy, and I knew I wanted some white chocolate chips in there too because I absolutely love them. Thus, this recipe was born! This is the ultimate rich chocolate cookie and has a complex flavor, provided by the hint of peanut butter and white chocolate, and a chewy texture, curtesy of the oats and flax meal. They were gobbled up so quickly, there was no evidence that they had ever been on the plate!
With Valentine’s Day coming up, these are the perfect treat for your someone special, and there’s no guilt because they are made without butter, oil, egg yolks, or gluten (if you be sure to use gluten-free assured oats)! Wow!
~Preheat oven to 350 degrees F. Line two baking sheets with parchment (or silicone mats).
~Put all ingredients into a large bowl and mix together well. Using a silicone spatula, work the ingredients (may I say, mush the ingredients?) together until they are all moistened and a uniform batter (at first, it will look like there’s no way the dry ingredients are going to be pulled together by the egg whites, but after working them a bit, it all comes together!). Use a tablespoon to drop the dough spaced out on your baking sheets (6 cookies per baking sheet). Bake 12 min or until they appear fully cooked. Let cool before carefully removing the cookies from the baking sheets (it may be easier to peel the parchment away from the cookies). Enjoy!
