I haven’t done a vegan muffin “for one” in awhile, so I figured it was about that time again. And, because I’ve been on such a granola kick lately, I figured I needed to incorporate that obsession into my newest creation. The *granola recipe is the same as my Cinnamon Raisin Granola, sans raisins (so, plain cinnamon granola basically) and using agave instead of honey (for the purpose of keeping it vegan, of course). This muffin has a sweet strawberry taste and a beautiful pink hue, making it perfect for a cheery breakfast on the go (or at home!).
~Preheat oven to 400 degrees F. Spray a small baking ramekin with non-stick spray (or line with a paper muffin liner).
~In a small bowl, mix together all of the dry ingredients. Add all of the wet ingredients and stir until combined. Fold in the strawberry jam then fold in the 1 Tbs. of granola. Transfer the batter to the baking ramekin. Top with the remaining 1 Tbs. of granola. Place in the oven and fold a piece of foil over the ramekin, like a tent, to shield the granola on top from burning during baking. Bake for 25 min or until a toothpick comes out clean. Let cool and then enjoy!
