What is more romantic than cooking breakfast for your special someone? How about chocolate and raspberries? How about both?! This Baked Chocolate Raspberry Oatmeal is rich and chocolaty but not full of calories, so you can feel like you’re having a Valentine’s Day treat, but not feel guilty about it. And, because it is similar to cake, you can make one for the evening, and serve it next to a small scoop of vanilla ice cream for dessert! Either way, breakfast or dessert, this baked oatmeal will make you fall in love all over again. Swoon…
*(I used frozen, and thawed them in the microwave for a few seconds so they’d break up and leach out some of their juices, which add a ton of flavor to the oats!)
~Preheat oven to 375 degrees F and prepare a baking ramekin with non-stick spray.
~In a microwave safe bowl, par-cook the oatmeal by combining the oats and water, and microwaving for 1 min. Remove from microwave and stir in all of the other ingredients. Transfer to your baking ramekin. Bake for approximately 20 min, until cooked through. Let cool a bit and dust the top with a little powdered sugar.
