Every once in awhile, a girl just has to have some chocolate for breakfast! I love the idea of stirring some cocoa powder into my oatmeal because it turns it into a rich, chocolaty treat, while adding less than 15 calories to the whole bowl (a Tbs is only 15 calories)! Plus, who doesn’t love the combo of fruit and chocolate?
Overnight oats are super simple, take minimum prep time, and because you make them in the evening before you go to bed, breakfast is ready and waiting for you as soon as you wake up! Plus, your breakfast is full of protein and antioxidants, which gives you an awesome head start to the day.
Chocolate Blueberry Overnight Oats
¼ cup old fashioned oats
½ cup water
¼ cup unsweetened almond milk
¼ cup non-fat plain Greek yogurt
¼ cup blueberries (I used frozen)
½-1 Tbs. unsweetened cocoa powder (amount depends on how strong you want your morning chocolate) (I used Scharffen Berger)
1 tsp. Splenda
Optional toppings:
1 tsp. mini dark chocolate chips
1 tsp. cacao nibs
¼ tsp. cinnamon (make it Mayan!)
~(In the evening before you go to bed) In a large cereal bowl, microwave oats and water for 55-60 seconds, keeping an eye on it so it doesn’t boil over.
~Stir in the almond milk, yogurt, berries, cocoa powder and Splenda. Cover with plastic wrap, and put in the fridge for several hours or overnight. Enjoy your breakfast when you wake up! {It’s like a delightfully cold bowl of pudding!} Top it with one of the optional toppings if you’d like.
