“And please, don’t feel guilty at all.”
“Ok.”
“Trust me, eat them, smile because you just had brownie pancakes for breakfast, and they only set you back about 130 calories. “
“For all the pancakes?”
“Yup.”
“And does that include sprinkles?”
“Yes. Sprinkles too. You convinced?”
“Don’t need to tell me twice. Give me my breakfast!”
That is the conversation you and I are having. And now, you have this extreme need to make Chocolate Brownie Pancakes. I don’t blame you!
Healthy Chocolate Brownie Pancakes
(inspired by Peanut Butter & Peppers)
(makes 1 serving)
1 egg white
1 Tbs. unsweetened almond milk
3 Tbs. applesauce
¼ tsp. vanilla extract
3 Tbs. spelt flour (or flour of your choice)
1 Tbs. unsweetened cocoa powder (I use Scharffen Berger)
¼ tsp. baking soda
¼ tsp. sweetener (one Pure Via packet)
pinch of salt
1 tsp. confetti sprinkles, to top with (optional…but necessary)
~In a small bowl, combine all ingredients (except for the sprinkles, because those are for the top!). Stir until well combined.
~Heat up your skillet (or griddle), sprayed with nonstick spray. When the skillet is hot enough, pour 3 even pancakes from the batter (approximately ¼ cup of batter per cake). Let cook for 2-3 min on each side.
~Plate them up, topped with confetti sprinkles! Here’s some options: drizzle with some maple syrup; spread on a little Earth Balance; drizzle with some sugar free chocolate syrup (when it’s just one of those mornings!); dollop with a bit of Greek yogurt, or spread on a little almond or peanut butter for a punch of protein! The delish options are practically endless!

Oh wow. I just made these for dessert and I have to say they turned out amazing I can’t believe they are healthy! I topped them with some light vanilla ice cream for a delicious 200 calorie treat!
