Sometimes you need a dessert option that looks beautiful but feels healthy, or a breakfast option that tastes healthy but looks decadent; this is both! Remember my Vegan Peanut Butter Banana Bread? Here’s a great way to use up leftovers (you had leftovers?), or a fun way to serve banana bread to your guests or family without handing them a slab of banana bread. The recipe results in one parfait, so just multiply it for how many people you want to serve.
Peanut Butter Banana Bread Parfait
Peanut Butter Banana Bread Parfait
(one parfait)
2 thin slices PB Banana Bread, cubed
¼ cup non-fat plain Greek yogurt
½ Tbs. natural peanut butter
1-2 drops liquid vanilla stevia (or ¼ tsp. vanilla extract and ½ tsp. Splenda)
½ tsp. chopped dry roasted peanuts
~In a small bowl, combine yogurt, peanut butter, and stevia. Mix well.
~In a small glass cup, layer: ½ of the cubes of banana bread, ½ of the peanut butter yogurt, the rest of the banana bread cubes, then the rest of the yogurt, and top it all off with the chopped peanuts.
*Optional: add a layer of thinly sliced bananas in the middle of the parfait!

I love making parfait, but I usually make it from brownies or chocolate cake or something chocolatey!! Banana bread sounds like a great base for a parfait. I’m definitely going to have to start branching out!
