I’ve always loved those peanut butter filled pretzel bites and I have been known to cram down some chocolate-dipped pretzels when they’re available, so I knew I had to combine the best of both worlds. These would be adorable party treats and they’re super simple to make, but making a small batch for yourself wouldn’t be so bad either. I used my favorite gluten-free pretzels for these, but you can use whatever tickles your fancy.
Almond Butter Pretzel Bites (Gluten-Free)
(makes 12 Pretzel Bites)
24 small pretzel twists (I use Glutino)
2 Tbs. almond butter
1 Tbs. powdered sugar
2 Tbs. semisweet chocolate, melted*
*melt over a double-boiler or melt in short intervals in the microwave
~In a small bowl, combine the almond butter and powdered sugar until smooth. Apply a small amount of the filling to a pretzel, sandwich it together with another pretzel, then dip the end in your melted chocolate. Lay them on a piece of parchment to set. Let set completely before serving (if you’re eager, like me, then put them in the freezer to speed things along!).
