When I was growing up, I remember it being really special when my mom bought Rocky Road Ice Cream. I couldn’t believe that there were flavors that had so many things mixed in! Now, Rocky Road is considered child’s play because of all of the wacky and complicated things that can be in your ice cream carton, but for me, it is the classic flavor that ruined just plain old ice cream. Remembering this has made me hungry for a rich, chocolate cookie that has way too many fun flavors crammed in it!
Rocky Road Cookies
Rocky Road Cookies
(makes 9 cookies)
½ cup powdered sugar
½ cup Splenda
1/3 cup unsweetened cocoa powder (I use Scharffen Berger)
¼ cup flax seed meal
½ tsp. salt
1/3 cup old fashioned oats
2 egg whites
1 tsp. vanilla extract
¼ cup toasted, chopped almonds
3 Tbs. Mallow Bits*
*I used these in this recipe too
~Preheat oven to 350 degrees F and line a cookie sheet with parchment or a silicone mat.
~In a medium-sized mixing bowl, combine all of the dry ingredients. Create a well in the center, and add the egg whites and vanilla extract. Carefully and thoroughly mix until the batter comes together (this involves some serious “mushing” until it comes together). Then, fold in the almonds and the Mallow Bits (I folded in only half and pressed the rest into the tops of the cookies so you could see what was inside!). Use a cookie scoop to scoop the batter onto your cookie sheet, creating 9 cookies (or more if you use a small spoon) [if you decided to reserve some of your almonds and Mallow Bits, press them into the top of each cookie dough mound now]. Bake for 10-12 min. Let cool, and enjoy!

Those look lovely! As for staying in line with so many temptations, I just run … a lot. And then I don’t feel guilty indulging in dessert several times each week.
