Making your own cereal is a great way to know what exactly you’re getting when you pour your morning bowl. You start with a 100% basic puffed rice cereal, and then follow the same procedures as when you’re making granola. The result is a low calorie, all natural cereal that is all yours and guilt-free. I love that you can mix up the spices and add fruits and nuts when you build your breakfast in the morning. Plus, having this in your cupboard will get you excited about partaking in the most important meal of the day (maybe several times a day!).
Cinnamon Crunchy Clusters Cereal
2 cups puffed brown rice cereal
1 cup old fashioned oats
2 Tbs. shredded unsweetened coconut
3 Tbs. Splenda or Stevia
¼ cup unsweetened applesauce
1 tsp. vanilla extract
1 tsp. cinnamon
~Preheat oven to 300 degrees F. Line a baking sheet with parchment paper, spray with nonstick spray.
~In a large bowl, combine the cereal, oats, and Splenda. Create a well in the center, and add the applesauce, vanilla, and cinnamon. Quickly but carefully mix it all together until the ingredients are completely incorporated. Pour the mixture onto the baking sheet and spread into an even layer. Bake for 45-60 min, stirring it every 15-20 min, until golden brown. Let cool completely on a wire rack and pour into an air-tight container until you’re ready to enjoy it!
