I was always that kid with her hands in the bowl of cookie dough while my mom was trying to scoop it onto baking sheets. I use to run full-force to the kitchen at the first inkling that cookies were being made because I didn’t want to miss the dough! Forget the cookies!
As I got older, this certainly didn’t change. I remember one time when my mom and I ate so much of a bowl of cookie dough (specifically, Kitchen Sink Cookie Dough, full of every kind of baking chip, cereal, coconut, and nuts) that by the time a few of them were baked, we didn’t want the cookies anymore (I don’t think we wanted the cookies in the first place). And this affliction has certainly been handed to my younger brother as well, because when he was visiting me just a few months ago, I made him cookies, but he reached straight for the bowl instead.
So, when I received Lindsay Landis’s cookbook, The CookieDough Lover’s Cookbook, I knew that I had found someone who knew who I truly was. She’s compiled a book full of egg-less cookie dough recipes and treats that will make your heart sing. The photos are beautiful and I think I drooled all over them. Upon realizing that I was out of flour (yup, a baker runs out of flour too), I shed a tear for not being able to attempt a recipe immediately, then I ran out for cookie dough frozen yogurt to hold me over until I was fully stocked up!
I’ve decided to makeover the most essential recipe in her cookbook for this post. The edible chocolate chip cookie dough is amazing, and I’ve tweaked it a little for my own liking (made it vegan, reduced sugar, and gluten-free), and I did a riff on one of the cookie sandwiches she has in the book! Chocolate Chip Cookie Dough Sandwich Cookies
(makes 4 sandwich cookies)
(based on The Cookie Dough Lover’s Cookbook by Lindsay Landis)
¼ cup Earth Balance (or butter substitute)
2 Tbs. Splenda
2 Tbs. brown sugar
1 Tbs. unsweetened almond milk
¼ tsp. vanilla extract
¼ tsp. salt
½ cup + 2 Tbs. oat flour (or flour of your choice)
1 Tbs. semi-sweet chocolate chips (mini work best)
1 Tbs. old fashioned oats
1/8 tsp. baking soda
~Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
~On medium speed, cream the Earth Balance, brown sugar, and Splenda until fluffy and light. Then, add the almond milk and the vanilla and mix until well mixed. Then, slowly add the salt and oat flour. When the dough comes together, turn off the mixer and mix in the chocolate chips.
~Set aside 4-5 tsp. of the raw cookie dough (try not to eat it!! In fact, place it in the fridge so it will firm up a bit while you finish the recipe!). With the rest of the dough (not the reserved dough), add the oats and the baking soda. Divide the dough into 8 cookies, rolling into balls, and placing the dough evenly spaced on the cookie sheet. Bake for 7-9 min, until golden brown. Let the cookies cool on a wire rack.
~When the cookies are cool, fetch your reserved cookie dough from the fridge. Divide it into four portions, roll it into a ball and flatten a bit, then sandwich between two of the finished cookies. Repeat with all of the cookies/dough until your done! Enjoy and try to share one with someone you love.
