I’m really excited about the recipe I’m about to share with you! It’s done in less than 5 min, won’t overheat your kitchen (perfect for these sweltering summer days), and it’s a sweet treat that won’t break your caloric bank (if you eat them in moderation like any other nut). If you love the peanuts that are in the Cracker Jack box, this one’s for you! And since it’s baseball season, all the more reason to make a batch to share with your friends while routing on your favorite team (or while you’re talking and pretending to watch the game).
Honey Glazed Peanuts
2 cups dry roasted, unsalted peanuts
¼ cup honey
¼ tsp. salt
~First, lay out a piece of parchment or foil, sprayed with nonstick spray. This is where you’ll place your finished peanuts to cool.
~Spray a skillet (I used a stainless steal pan) with nonstick spray. Over medium heat, combine the honey and the salt. As soon as it starts to bubble, add the peanuts, and stir constantly until the honey becomes thick, slightly brown and completely covers the peanuts (about 3 min). Turn off the heat and pour the finished peanuts onto your awaiting parchment/foil. Let cool completely before breaking clusters apart by hand and putting into containers.

I love that we live across the street from the ballpark, so we get a great advantage of being able to watch the game and socialize while watching from the gated outfield, and bring our own healthy meals (still with plenty of beer and harmless sunflower seeds to go around)!
