Honestly, these cookies started as just my want to eat white chocolate cherry cookie dough. I’ll confess that. But, after I started mixing the dough, and I realized that I only had enough dried cherries for this one batch, I thought again, added the egg whites, and just made cookies. Necessity of finished cookies prevailed.
These oatmeal cookies are fluffy and rich, packed with creamy, sweet white chocolate and bold chunks of dried cherries. The mister loved them packed in his lunch because they felt like a “breakfast” treat (not that I fully condone cookies for breakfast…only healthy ones).
White Chocolate Cherry Oatmeal Cookies
(makes 2 dozen)
¼ cup Earth Balance (or softened butter)
¼ cup unsweetened applesauce
¼ cup coconut sugar (or raw sugar)
¼ cup brown sugar
¼ cup Splenda (or sweetener of your choice)
1 tsp. vanilla extract
2 egg whites
½ tsp. salt
½ tsp. baking soda
1 cup flour (I used a gluten-free mix, but all purpose would work)
1 ½ cup old fashioned oats
¼ cup white chocolate chips
¼ cup dried unsweetened cherries*
*I like to use my kitchen scissors to snip each dried cherry in half, since they’re so large and that way they disperse more throughout the cookies.
~Preheat oven to 375 degrees F. Line 2 baking sheets with parchment or silicone baking mats.
~In the bowl of your mixer, combine the Earth Balance, applesauce, sugar, brown sugar, and Splenda. Mix on medium speed until well mixed and fluffy. Add the vanilla and egg whites and continue to mix for a couple more minutes. Then, add all of the dry ingredients. When the dough comes together, mix in the white chocolate chips and the dried cherries.
~Use a cookie scoop (approximately 1 Tbs) to scoop the dough onto the baking sheets. Bake for 12 min, until golden brown. Let cool on a wire rack and enjoy!
