Remember this Foodie Penpal package I received? Carrie used her favorite recipe from Two Peas and Their Pod to make me a batch of granola, knowing I love to make my own granola too. Since trying the original recipe, I decided to put my own spin on it and make my own Healthy Coconut Almond Granola that is just as addictive and delicious but with a fraction of the calories! Cheers to breakfast!
Healthy Coconut Almond Granola
(makes approximately 15 ¼-cup servings)
2 ½ cups old fashioned oats
½ cup unsweetened coconut flakes*
1/3 cup raw chopped almonds
¼ cup raw pepitas
1 tsp. cinnamon
¼ tsp. salt
3 Tbs. pure maple syrup
2 Tbs. coconut oil, melted
¼ cup unsweetened applesauce
1 tsp. vanilla extract
¼ tsp. coconut extract
*I used a mixture of small and large coconut chips, but use what you have on hand or what you are able to find in stores
~Preheat oven to 300 degrees F. Line a baking sheet with parchment or a silicone mat.
~In a large bowl, combine all of the ingredients. Make sure everything is mixed well. Pour the mixture onto the baking sheet. Bake for 30-40 min, stirring every 10 min until well toasted.
~Let cool completely before storing in a well-sealed container. Eat by the handful, sprinkled over Greek yogurt, or as a small bowl of cereal.

Hi Sandra! I don’t because I don’t really want to set a specific serving size on the granola (some people love a sprinkle, some love a small cup…). But in the past I’ve plugged all ingredients into Calorie King and calculated it, then divided it by how many servings I’ve decided it will be.
