Do you have those staple items that you tend to eat everyday? I’m a creature of habit. Everyday I like to eat oatmeal and Greek yogurt. But, I also love rice cakes with a special spread.
My special spread? It’s Healthy Peanut Butter Cheesecake Spread! Sounds decadent, right? Well, believe me, it is crazy low in calories and is so simple!
I literally mix it up in seconds and spread it on my rice cake and sometimes top it with a no-sugar jam, a sprinkle of cinnamon, and a few grains of course salt (I love adding the course salt if I’m using a rice cake that’s unsalted, or if it is one of the sweet flavors, like caramel corn or chocolate)!

I will give you the recipe for a whole batch, because you can easily mix it in a small container with a lid, and save half of it for your snack later (I’d say that one batch makes 2 portions!). But, I honestly usually mix only a half-batchbecause it makes just enough for one snack if you only make half!
Healthy Peanut Butter Cheesecake Spread on a chocolate rice cake!
Healthy Peanut Butter Cheesecake Spread
1 Laughing Cow wedge: Swiss Light OR Cream Cheese Light*
1 Tbs. PB2 powdered peanut butter
½ Tbs. water**
*I know that it may sound weird, but I honesly love and prefer to use the Swiss Light wedge for this recipe because it adds even more of the tanginess that real cheesecake has!
**If you want your spread extra thick, use less or no water; but I like mine to spread more easily, so I use this much water.
~In a small container, mix together all of the ingredients until they are completely incorporated. Done! Enjoy on anything and everything!
Note: PB2 and powdered peanut butter can be found in most Whole Foods Markets now
