- ½ cup natural nut butter (I used a mixture of peanut and almond butters)
- 2 Tbs. honey
- ¼ tsp. vanilla extract
- ¾ cup old fashioned oats
- 1 Tbs. ground chia seeds (“milled”)
- 2 Tbs. flax seed meal
- ¼ cup mini semisweet chocolate chips
- In a small bowl, combine the nut butter, honey, and vanilla (if you have cold nut butter, then microwave it for about 30 seconds before combining, then make sure the mixture is cooled before continuing to the next step).
- In a separate bowl, combine all of the rest of the ingredients. Add the peanut butter mixture and use a wooden spoon to help combine everything. It will seem almost crumbly. Use a cookie scoop to scoop the dough, then transfer the ball to your hands and firmly press everything into a tighter ball.
- Set finished Cookie Bites into a storage container with a lid or on a plate and cover with plastic wrap. Refrigerate for at least 20 min to set before serving.
