The other day my mom texted me that she had made my granolaagain. That the smell was filling her house.
Sold.
I hadn’t made granola in almost a month! One of my favorite things…but I hadn’t been home and sane long enough to make any. Sad, right?
I thought so.
Let’s fix that. And let’s make the house smell like Fall. Ok?

Fall Spiced Granola
2 cups old fashioned oats
½ cup quick oats
¼ cup unsweetened fine shredded coconut
¼ cup unsweetened coconut chips*
1/3 cup unsweetened applesauce
1 Tbs. pure maple syrup
1 Tbs. Stevia (or sweetener of your choice)
1 tsp. vanilla extract
1 tsp. cinnamon
¼ tsp. allspice
¼ tsp. mace**
¼ cup toasted almonds, roughly chopped
¼ cup golden raisins
*If you can’t find different sizes of unsweetened coconut, then just use ½ cup of whatever size you find.
**If you don’t have mace, use nutmeg to add another fall-spice flavor to the mix.
~Preheat oven to 300 degrees F. Line a baking sheet with foil or parchment and spray with nonstick spray.
~In a large bowl, combine all of the ingredients except for the almonds and the raisins. Use a rubber spatula to thoroughly mix all of the ingredients together. Spread in an even layer onto the baking sheet.
~Bake for 45-50 min, or until golden brown, stirring and turning the granola every 15 min. When the granola is golden and ready, remove it from the oven. Sprinkle the almonds and raisins over the granola, stir them in, and then let the granola cool completely before storing in an airtight container (or giving as a gift!).
